Description
A bright, no-bake snack mix made with Chex cereal coated in lemony white chocolate, then tossed in powdered sugar for a sweet-tangy, citrusy crunch.
Ingredients

- 6 cups rice or corn Chex cereal
- 1 1/2 cups white chocolate chips
- 1 tbsp lemon zest (about 1 lemon)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 1/2 cups powdered sugar
- Optional: yellow sanding sugar or sprinkles
Instructions
- In a microwave-safe bowl, melt white chocolate chips in 30-second bursts, stirring until smooth. Stir in lemon zest, lemon juice, vanilla, and salt.
- Place cereal in a large bowl. Pour lemon-chocolate mixture over cereal and gently stir until evenly coated.
- Transfer coated cereal to a gallon-size zip-top bag (or large lidded container). Add powdered sugar, seal, and shake until fully coated. Add sanding sugar/sprinkles if desired.
- Spread on a baking sheet to cool about 10 minutes. Store airtight or portion into treat bags.
