It combines sweet, juicy watermelon with tangy cherry tomatoes and creamy mozzarella, all brought together with a simple balsamic glaze dressing. Ingredients

  • 3 cups watermelon, cubed
  • 1.5 cups cherry tomatoes, halved
  • 1 cup mozzarella balls (ciliegine), drained
  • 2 tablespoons fresh basil, torn or sliced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Pinch of flaky sea salt, to taste
  • Cracked black pepper, optional

Instructions

  1. Cube the watermelon and place it in a large mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl with the watermelon.
  3. Gently add the drained mozzarella balls to the salad.
  4. Tear or slice the fresh basil leaves and sprinkle them into the bowl.
  5. Drizzle the extra virgin olive oil and balsamic glaze over the ingredients.
  6. Season with flaky sea salt and cracked black pepper to taste.
  7. Gently toss all the ingredients together, being careful not to mash the watermelon or mozzarella.
