- 1 pound ground turkey
- 1 sweet potato, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 can black beans (15 oz), drained and rinsed
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add ground turkey and cook until browned.
- Stir in sweet potato, diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, paprika, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until sweet potatoes are tender.
- Serve hot with your choice of toppings.
