Ingredients

  • 1 pound ground turkey
  • 1 sweet potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add ground turkey and cook until browned.
  4. Stir in sweet potato, diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, paprika, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until sweet potatoes are tender.
  6. Serve hot with your choice of toppings.
