Description

Delicious and healthy muffins packed with berries and cottage cheese for a blissful treat.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine cottage cheese, applesauce, honey, eggs, and vanilla extract. Mix until well blended.
  3. In another bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the mixed berries.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
