  • 4 medium Tomatoes (Fresh ripe tomatoes recommended.)
  • 1 cup Heavy Cream (Can substitute with half-and-half.)
  • 3 cloves Garlic (Use fresh garlic for best results.)
  • 2 tablespoons Olive Oil (Butter can be used for a richer flavor.)
  • 1 bunch Basil/Parsley (Fresh herbs preferred.)
  • 12 ounces Pasta (Spaghetti or fettuccine recommended.)

Instructions

  1. Boil a large pot of salted water and add your pasta of choice. Cook until al dente, usually around 8-10 minutes, then drain and set aside, reserving a bit of pasta water.
  2. In a large skillet, heat a splash of olive oil over medium heat. Sauté finely minced garlic until fragrant, about 1-2 minutes.
  3. Toss in your chopped tomatoes and cook until they soften and release their juices, approximately 5-7 minutes.
  4. Pour in the heavy cream, stirring gently. Allow the mixture to simmer for about 3-5 minutes.
  5. Fold in the sweet lobster meat, ensuring it’s well combined with the sauce. Heat through for 2-3 minutes.
  6. Add the drained pasta into the sauce, tossing gently to coat each strand.
  7. Plate the pasta with a sprinkle of fresh basil or parsley and enjoy immediately.
