  • 1 (4 ounce) can diced green chilies

  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes, kidney beans, pinto beans, and diced green chilies.
  5. Add the chili powder, cumin, oregano, salt, black pepper, and cayenne pepper (if using). Stir to combine.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally. This allows the flavors of the Texas Roadhouse chili to meld.
