  • 68 boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup cornstarch (for thickening, optional)
  • 1/4 cup cold water (for thickening, optional)

Instructions

  1. Place the chopped onion and minced garlic at the bottom of your slow cooker.
  2. Arrange the chicken thighs over the onion and garlic.
  3. In a medium bowl, whisk together the chicken broth, soy sauce, brown sugar, apple cider vinegar, dried thyme, and black pepper.
  4. Pour the liquid mixture over the chicken thighs in the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily Shreds.
  6. If desired, for a thicker sauce, in a small bowl, whisk together the cornstarch and cold water to create a slurry.
  7. Stir the cornstarch slurry into the crockpot during the last 30 minutes of cooking.
  8. Shred the tender chicken thighs directly in the crockpot or remove and shred before returning to the sauce.
  9. Serve your crockpot chicken thighs hot with your favorite sides.
