- 6–8 boneless, skinless chicken thighs
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 cup cornstarch (for thickening, optional)
- 1/4 cup cold water (for thickening, optional)
Instructions
- Place the chopped onion and minced garlic at the bottom of your slow cooker.
- Arrange the chicken thighs over the onion and garlic.
- In a medium bowl, whisk together the chicken broth, soy sauce, brown sugar, apple cider vinegar, dried thyme, and black pepper.
- Pour the liquid mixture over the chicken thighs in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily Shreds.
- If desired, for a thicker sauce, in a small bowl, whisk together the cornstarch and cold water to create a slurry.
- Stir the cornstarch slurry into the crockpot during the last 30 minutes of cooking.
- Shred the tender chicken thighs directly in the crockpot or remove and shred before returning to the sauce.
- Serve your crockpot chicken thighs hot with your favorite sides.
