Ingredients
Scale
- 1/2 cup Butter (Can substitute with margarine for a dairy-free option.)
- 1/2 cup Sugar (Brown sugar can add a deeper flavor.)
- 1 1/2 cups All-purpose flour (Gluten-free flour can be used.)
- 1 large Egg (A flax egg can be used for a vegan option.)
- 8 oz Cream cheese (Neufchâtel cheese can be a lower-fat alternative.)
- 1/2 cup Sour cream (Can substitute with Greek yogurt for a healthier option.)
- 1/2 cup Sugar (Consider using powdered sugar for a smoother texture.)
- 1 teaspoon Vanilla extract (Almond extract can provide a different flavor profile.)
- 1 packet Clear gelatin (Agar-agar can be used for a vegetarian version.)
- 1 cup Fondant (Store-bought or homemade fondant can be used.)
- 1 tablespoon Edible glitter (Optional, can be omitted for simplicity.)
Instructions
- Cream together ½ cup of softened butter and ½ cup of sugar until light and fluffy. Gradually mix in 1½ cups of all-purpose flour and 1 egg until well combined. Press the mixture into a greased baking dish and pre-bake it at 350°F for 10 minutes, until just set and lightly golden.
- In a large bowl, beat 8 oz of room-temperature cream cheese until smooth. Add in ½ cup of sour cream, ½ cup of sugar, and 1 teaspoon of vanilla extract. Mix until creamy and well-blended before pouring it over the cooled cookie crust.
- Cover the baking dish and place it in the refrigerator. Chill for 3-4 hours, or until the cheesecake filling is firm and set.
- Prepare clear gelatin according to package instructions. Allow it to cool slightly, then pour it gently over fondant snowmen placed on top of the chilled cheesecake. Let the gelatin set completely in the fridge for about an hour.
- Once the gelatin has firmed up, cut the cheesecake into bite-sized squares. Arrange the decorated snowmen on top and sprinkle with edible glitter for that magical snow globe effect.
