Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 8 oz smoked sausage (sliced)
  • 1 cup long-grain rice (not quick-cooking)
  • 2 cups chicken broth (can substitute with vegetable broth)
  • 1 medium onion (diced)
  • 1 cup bell peppers (mixed colors, diced)
  • 1 cup celery (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp Cajun seasoning
  • 14.5 oz canned diced tomatoes
  • 2 tbsp green onions (chopped, for garnish)
  • 1 cup okra (sliced)
  • to taste hot sauce (for extra heat)

Instructions

  1. In a large pot over medium heat, add a splash of olive oil and sauté diced onion, bell peppers, and celery until they soften, about 5 minutes.
  2. Toss in the minced garlic and cook for an additional minute, stirring frequently until fragrant.
  3. Stir in sliced smoked sausage and cook for about 3-4 minutes until browned.
  4. Add Cajun seasoning and the canned diced tomatoes, stirring until combined and letting it simmer for 2 minutes.
  5. Gradually add chicken broth and long-grain rice, stirring well. Bring to a boil, reduce heat, cover, and let it simmer for 15 minutes.
  6. Once the rice is tender, gently fold in the shrimp and cook for another 5 minutes until they turn pink and opaque.
  7. Taste and adjust with salt, pepper, or more Cajun seasoning if desired.
  8. Remove from heat, let it rest for a few minutes, and top with chopped green onions before serving.
