- 1 lb large shrimp (peeled and deveined)
- 8 oz smoked sausage (sliced)
- 1 cup long-grain rice (not quick-cooking)
- 2 cups chicken broth (can substitute with vegetable broth)
- 1 medium onion (diced)
- 1 cup bell peppers (mixed colors, diced)
- 1 cup celery (chopped)
- 3 cloves garlic (minced)
- 2 tbsp Cajun seasoning
- 14.5 oz canned diced tomatoes
- 2 tbsp green onions (chopped, for garnish)
- 1 cup okra (sliced)
- to taste hot sauce (for extra heat)
Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté diced onion, bell peppers, and celery until they soften, about 5 minutes.
- Toss in the minced garlic and cook for an additional minute, stirring frequently until fragrant.
- Stir in sliced smoked sausage and cook for about 3-4 minutes until browned.
- Add Cajun seasoning and the canned diced tomatoes, stirring until combined and letting it simmer for 2 minutes.
- Gradually add chicken broth and long-grain rice, stirring well. Bring to a boil, reduce heat, cover, and let it simmer for 15 minutes.
- Once the rice is tender, gently fold in the shrimp and cook for another 5 minutes until they turn pink and opaque.
- Taste and adjust with salt, pepper, or more Cajun seasoning if desired.
- Remove from heat, let it rest for a few minutes, and top with chopped green onions before serving.
