Instructions

  1. Crush 1.5 cups of freeze-dried raspberries into powder and chop 0.5 cup coarsely. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. In a separate mixing bowl, cream together the room temperature butter and cream cheese until fluffy and light in color, about 2-3 minutes.
  4. Gradually add the granulated sugar, beating until fully incorporated. Add the egg, vanilla, and almond extracts, mixing briefly until just combined.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Gently fold in the crushed freeze-dried raspberry powder and the chopped raspberry pieces.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 11-13 minutes, until the edges are set.
