Crispy Quinoa Veggie Bites for a Perfect Snack Time Treat

- 1 cup Quinoa (Cooked and cooled)
- 1 large Egg (Can substitute with flaxseed meal mixed with water for vegan option)
- 1 cup Carrots (Chopped)
- 1 cup Spinach (Chopped)
- 1 cup Bell Peppers (Chopped)
- 1 cup Breadcrumbs (Can use gluten-free breadcrumbs or crushed oats)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic powder
Instructions
- Rinse your quinoa under cold water to remove any bitterness. Cook it according to package instructions until fluffy and allow it to cool completely.
- In a large mixing bowl, combine the cooled quinoa, chopped vegetables, egg or flaxseed mixture, breadcrumbs, and spices. Stir gently until everything is well incorporated.
- With your hands, scoop portions of the mixture and shape them into small balls or patties.
- For Baking: Preheat your oven to 375°F (190°C). Place the shaped bites on a greased baking sheet or lined with parchment paper. Bake for 20-25 minutes until they turn golden brown and crispy.
- For Pan-frying: Heat a little oil in a skillet over medium heat. Fry the bites for about 3-4 minutes on each side until they are beautifully browned and crisp.
