Crispy Quinoa Veggie Bites for a Perfect Snack Time Treat


Ingredients

  • 1 cup Quinoa (Cooked and cooled)
  • 1 large Egg (Can substitute with flaxseed meal mixed with water for vegan option)
  • 1 cup Carrots (Chopped)
  • 1 cup Spinach (Chopped)
  • 1 cup Bell Peppers (Chopped)
  • 1 cup Breadcrumbs (Can use gluten-free breadcrumbs or crushed oats)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder

Instructions

  1. Rinse your quinoa under cold water to remove any bitterness. Cook it according to package instructions until fluffy and allow it to cool completely.
  2. In a large mixing bowl, combine the cooled quinoa, chopped vegetables, egg or flaxseed mixture, breadcrumbs, and spices. Stir gently until everything is well incorporated.
  3. With your hands, scoop portions of the mixture and shape them into small balls or patties.
  4. For Baking: Preheat your oven to 375°F (190°C). Place the shaped bites on a greased baking sheet or lined with parchment paper. Bake for 20-25 minutes until they turn golden brown and crispy.
  5. For Pan-frying: Heat a little oil in a skillet over medium heat. Fry the bites for about 3-4 minutes on each side until they are beautifully browned and crisp.
