Description

Enjoy a nourishing bowl of Pork & Bok Choy Udon Soup, filled with rich flavors and comforting textures.

Ingredients

Scale
  • 6 ounces Dried Japanese udon noodles (Fettuccine can be used as a substitute.)
  • 1 small bunch Bok choy, coarsely chopped (Swiss chard or spinach can be substituted if needed.)
  • 1 pound Pork tenderloin, sliced (Cut into 1/4-inch slices. Chicken breast can be used as a lighter option.)
  • 6 cups Reduced-sodium chicken broth (Vegetable broth keeps it light.)
  • 3 tablespoons Reduced-sodium soy sauce (Tamari offers a gluten-free alternative.)
  • 4 teaspoons Minced fresh gingerroot (Ground ginger could work, but fresh is ideal.)
  • 3 cloves Minced garlic (Garlic powder can substitute in a pinch.)
  • Thinly sliced green onions (Adds a fresh, zingy touch.)
  • Sriracha chili sauce (Adjust the amount to fit your spice preference.)

Instructions

  1. Prepare the Noodles: Start by cooking the udon noodles according to the package instructions—this usually takes about 8-10 minutes. Once done, drain them and give them a quick rinse with cold water to prevent them from sticking together.
  2. Combine Ingredients in a Pot: In a Dutch oven or a large pot, combine the coarsely chopped bok choy, sliced pork tenderloin, chicken broth, soy sauce, minced ginger, and minced garlic.
  3. Bring to a Simmer: Heat the mixture over medium-high heat until it starts to gently boil. Lower the heat and let it simmer uncovered for about 5-7 minutes, or until the bok choy is tender and the pork is cooked through.
  4. Add the Noodles: Gently stir in the prepared udon noodles into the soup. Ensure everything is well mixed, allowing the flavors to meld together for an additional minute before serving.
  5. Serve and Garnish: Immediately ladle the soup into bowls. Garnish with thinly sliced green onions and a drizzle of Sriracha.
