These Pomegranate Caramels are a delightful combination of tangy fruit and sweet caramel, perfect for gifting.

- 1 cup Pomegranate Juice (Freshly squeezed or 100% pure juice)
- 1/4 cup Unsalted Butter (Can substitute with margarine)
- 1 cup Granulated Sugar (Can use brown sugar for deeper flavor)
- 1/2 cup Light Brown Sugar (Replace with more granulated sugar if needed)
- 1/2 cup Heavy Whipping Cream (Coconut cream works for dairy-free)
- 1 teaspoon Vanilla Paste or Extract (Optional)
- 1/2 teaspoon Flaky Sea Salt (Regular salt can be used)
- 1 drop Red Food Coloring (Optional for color)
Instructions
- Heat the pomegranate juice in a saucepan over medium-high heat until it boils, then reduce to a simmer for about 1 hour until thickened.
- Prepare a loaf pan or 8×8-inch pan by greasing it with butter and cutting squares of wax paper.
- Combine reduced juice with butter, sugars, and heavy cream in the saucepan, stirring well. Cook to a temperature of 255-260°F.
- Remove from heat and stir in vanilla, flaky sea salt, and optional red food coloring until smooth.
- Pour the caramel mixture into the prepared pan and smooth it out. Refrigerate for 2 hours until set.
- Cut into bite-sized pieces with an oiled knife and wrap each in wax paper.
- Optional: Drizzle melted chocolate over wrapped caramels before serving.
