Ingredients

  • 2 tablespoons warm milk
  • 1 teaspoon espresso powder
  • 4 ounces semi-sweet chocolate
  • maraschino cherries
  • sprinkles or coarse sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter and granulated sugar in a large bowl for about 2-3 minutes.
  3. Add the room-temperature egg and pure vanilla extract, then beat until well combined.
  4. Whisk together the all-purpose flour, cocoa powder, and salt in a separate bowl.
  5. Combine the dry ingredients gradually with the wet mixture, mixing until just combined.
  6. Stir in the warm milk and espresso powder until the dough is smooth and cohesive.
  7. Fold in the finely chopped semi-sweet chocolate.
  8. Scoop spoonfuls of the batter onto a parchment-lined baking sheet.
  9. Top your cookies with optional maraschino cherries or colorful sprinkles.
  10. Bake for 10-12 minutes until set but still soft in the center.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.
