Ingredients

- 1 cup cottage cheese
- 1/2 cup peanut butter
- 1/2 cup honey
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup jelly or jam
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, peanut butter, honey, eggs, and vanilla extract.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fill muffin tins about halfway with batter, then add a spoonful of jelly on top of each muffin.
- Cover the jelly with more batter until the cups are about 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
