Description

Delicious and protein-packed muffins combining the classic flavors of peanut butter and jelly with cottage cheese for a unique twist.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup jelly or jam
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, peanut butter, honey, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fill muffin tins about halfway with batter, then add a spoonful of jelly on top of each muffin.
  6. Cover the jelly with more batter until the cups are about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
