Description

An easy, overnight baked banana French toast casserole that’s custardy inside and topped with a crunchy streusel. Perfect for feeding a crowd during holiday brunch or weekend breakfasts.


Ingredients

  • 1 lb sourdough or French bread, cut into 1–2-inch chunks (day-old is ideal)
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 67 medium ripe bananas, peeled and chopped
  • For streusel: 3/4 cup all-purpose flour
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup salted butter, cold and cubed

Instructions

  1. Grease a 9×13-inch casserole dish with butter or nonstick spray.
  2. Put the bread chunks into a large bowl and fold in the chopped bananas so they’re evenly distributed.
  3. In a separate bowl, whisk together the eggs, milk, heavy cream, granulated sugar, light brown sugar, vanilla, and cinnamon until smooth.
  4. Pour the custard over the bread and bananas. Stir gently to coat every piece, pressing down a little so the bread begins to absorb the liquid.
  5. Transfer the mixture into the prepared dish, cover tightly, and refrigerate overnight (or at least 4 hours).
  6. When ready to bake, preheat the oven to 350°F (176°C). Remove the casserole from the fridge while the oven heats.
  7. Bake uncovered for 35–40 minutes, until the top is golden and the center is mostly set.
  8. While baking, make the streusel: combine the flour and brown sugar, then cut in the cold butter until crumbly.
  9. During the final 5 minutes of baking, sprinkle the streusel evenly over the casserole and return to the oven to crisp the topping.
  10. Let rest 5–10 minutes, then serve warm with maple syrup, powdered sugar, or toasted nuts.
