- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 can (15 ounces) diced tomatoes
- 2 cups chicken broth
- 8 ounces pasta
- 1 cup shredded cheese
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, brown the ground beef along with onion and bell pepper until softened.
- Add in the garlic and taco seasoning; cook for 1 minute.
- Stir in the diced tomatoes and chicken broth, bringing everything to a simmer.
- Add the pasta, cover, and cook until al dente.
- Remove from heat and stir in cheese and cilantro, allowing the cheese to melt.
- Serve hot, garnished with additional cilantro if desired.
