Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 can (15 ounces) diced tomatoes
  • 2 cups chicken broth
  • 8 ounces pasta
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, brown the ground beef along with onion and bell pepper until softened.
  2. Add in the garlic and taco seasoning; cook for 1 minute.
  3. Stir in the diced tomatoes and chicken broth, bringing everything to a simmer.
  4. Add the pasta, cover, and cook until al dente.
  5. Remove from heat and stir in cheese and cilantro, allowing the cheese to melt.
