Description

This Mediterranean shrimp orzo recipe is a bright one-pan dinner made with juicy shrimp, lemon, tomatoes, and salty feta. It’s fresh, fast, and ready in under 30 minutes—perfect for weeknights or meal prep.


Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on or off)
  • 1 cup dry orzo pasta
  • 2 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1 cup cherry tomatoes, halved
  • 3 cups chicken or vegetable broth
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp dried oregano
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 3/4 cup crumbled feta cheese (divided)
  • 1/4 cup fresh parsley, chopped
  • Optional garnish: lemon slices, extra feta, fresh dill

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Season shrimp with salt and pepper. Cook 2–3 minutes per side until pink and just cooked through. Transfer to a plate.
  2. Add remaining 1 tbsp olive oil to the skillet. Sauté garlic and cherry tomatoes for 2–3 minutes until fragrant and tomatoes begin to soften.
  3. Stir in orzo and toast for 1–2 minutes, stirring constantly to coat in the garlicky oil.
  4. Add broth, lemon zest, lemon juice, oregano, red pepper flakes (if using), and a pinch of salt. Bring to a simmer, cover, and cook 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  5. Return shrimp to the skillet and stir in about half the feta. Cook 1–2 minutes to warm through.
  6. Remove from heat. Top with parsley, remaining feta, and lemon slices (or dill). Rest 5 minutes before serving for the best texture.

Notes

  • This dish serves well with a side salad.
  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • For added freshness, use fresh herbs as a garnish.
