- 1/4 cup poppy seeds

Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the cottage cheese, sugar, oil, eggs, vanilla extract, lemon zest, and lemon juice until smooth.
- In a separate bowl, combine the flour, poppy seeds, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
