These Christmas Rice Crispy Truffles are chewy, sweet, festive, and incredibly easy to make. A fun no-bake holiday treat dipped in chocolate and finished with sprinkles—perfect for gifting, dessert trays, and parties.

- 3 tablespoons unsalted butter
- 1 (10 oz) bag mini marshmallows (approx. 6 cups)
- 6 cups Rice Krispies cereal
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 ½ cups white chocolate chips (or almond bark)
- Holiday sprinkles, for decorating
- Red and green food coloring (optional)
- Frosting or candy melts (optional alternative to chocolate)
Instructions
- In a saucepan, melt butter over medium heat. Add mini marshmallows and stir until smooth. Mix in vanilla and salt.
- Remove from heat and fold in the Rice Krispies until fully coated.
- Cool for 5 minutes, then roll into balls using greased hands or a cookie scoop. Transfer to a parchment-lined baking sheet.
- Refrigerate for 20 minutes until firm.
- Melt white chocolate in intervals. Dip each truffle halfway or fully, then add sprinkles.
- Use frosting or candy melts instead of chocolate for color variety.
- Let chocolate set at room temperature before serving or packaging.
