- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup all-purpose flour (for filling)
- powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine 1 cup flour, 1/2 cup butter, 1/4 cup powdered sugar, and 1/4 teaspoon salt; mix until crumbly.
- Press the mixture into the bottom of an 8×8 inch baking dish.
- Bake for 15-20 minutes until lightly golden.
- In another bowl, whisk together 1 cup sugar, 2 eggs, 1/2 cup lemon juice, 1 teaspoon lemon zest, and 1/4 cup flour.
- Pour the lemon mixture over the crust and bake for an additional 20-25 minutes.
- Let cool completely before slicing into bars.
- Dust with powdered sugar before serving.
