Description

Deliciously tangy and sweet lemon bars with a buttery crust.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup all-purpose flour (for filling)
  • powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine 1 cup flour, 1/2 cup butter, 1/4 cup powdered sugar, and 1/4 teaspoon salt; mix until crumbly.
  3. Press the mixture into the bottom of an 8×8 inch baking dish.
  4. Bake for 15-20 minutes until lightly golden.
  5. In another bowl, whisk together 1 cup sugar, 2 eggs, 1/2 cup lemon juice, 1 teaspoon lemon zest, and 1/4 cup flour.
  6. Pour the lemon mixture over the crust and bake for an additional 20-25 minutes.
  7. Let cool completely before slicing into bars.
  8. Dust with powdered sugar before serving.
