  • 2 racks Lamb Racks
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1 cup Fresh Mint Leaves
  • 1/4 cup Fresh Italian Parsley
  • 1/2 cup Pistachio Nuts
  • 2 cloves Garlic Cloves
  • 1/4 cup Olive Oil
  • to taste Salt
  • 1/2 cup Pomegranate Seeds

Instructions

  1. Begin by heating your BBQ grill to high temperature and your oven to 200ºC (390ºF).
  2. Season the lamb racks generously with smoked paprika, salt, and pepper, covering all sides.
  3. In a bowl, combine the lemon zest, lemon juice, fresh mint, parsley, pistachios, garlic, olive oil, and a pinch of salt. Mix until well incorporated.
  4. Grill the lamb racks on all sides until they’re beautifully caramelized, which should take about 5-7 minutes.
  5. Transfer the lamb to the oven to roast for about 10 minutes, aiming for medium-rare.
  6. Let the lamb rest for 15 minutes before slicing it into cutlets.
  7. Top each cutlet with the freshly made gremolata and garnish with pomegranate seeds.
