- 1/2 cup Pistachio Nuts

Instructions
- Begin by heating your BBQ grill to high temperature and your oven to 200ºC (390ºF).
- Season the lamb racks generously with smoked paprika, salt, and pepper, covering all sides.
- In a bowl, combine the lemon zest, lemon juice, fresh mint, parsley, pistachios, garlic, olive oil, and a pinch of salt. Mix until well incorporated.
- Grill the lamb racks on all sides until they’re beautifully caramelized, which should take about 5-7 minutes.
- Transfer the lamb to the oven to roast for about 10 minutes, aiming for medium-rare.
- Let the lamb rest for 15 minutes before slicing it into cutlets.
- Top each cutlet with the freshly made gremolata and garnish with pomegranate seeds.
