- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder

- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp espresso powder
- 1/2 tsp unsweetened cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C) and generously grease a muffin tin.
- Cream butter and granulated sugar together until light and fluffy.
- Mix in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture until a soft dough forms.
- Divide dough evenly and press into muffin tin, shaping each into a cup.
- Bake for 12–15 minutes, until lightly golden.
- Remove from oven and gently press centers down if needed; cool completely.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Gently fold in mascarpone cheese and espresso powder until smooth.
- Fill cooled cookie cups with the mascarpone mixture.
- Dust tops with cocoa powder before serving.
