Ingredients

  • 2 cups cooked sushi rice
  • 1 lb fresh sushi-grade salmon, chopped
  • 1/2 cup Japanese mayonnaise (preferably Kewpie)
  • 3 tbsp sriracha sauce (adjust to taste)
  • 1/4 cup green onions, chopped
  • 4 nori sheets, cut into strips
  • 2 tbsp toasted sesame seeds
  • 1 avocado, sliced (optional)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice according to package instructions. Once fluffy, mix in rice vinegar and spread evenly in a baking dish.
  3. In a bowl, combine chopped salmon with mayonnaise and sriracha until well mixed.
  4. Spread the salmon mixture over the rice layer and top with green onions and sesame seeds.
  5. Bake for 20-25 minutes until bubbly and golden brown.
