- 1 lb fresh Brussels sprouts, halved
- 2 ripe Bosc or Anjou pears, diced
- 1 cup fresh cranberries
- 3 tbsp extra virgin olive oil
- 2 tbsp raw honey (or maple syrup)
- 1 tsp salt
- ½ tsp black pepper
- ½ cup pecans (optional), toasted
Instructions
- Preheat oven to 400°F (200°C).
- Trim and halve the Brussels sprouts. Rinse and pat dry.
- In a large bowl, combine Brussels sprouts, diced pears, cranberries, olive oil, honey, salt, and pepper. Toss until well-coated.
- Spread the mixture on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes until tender and caramelized, stirring halfway through.
- If using pecans, add them in the last five minutes of roasting.
- Serve warm and enjoy!
