- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp cumin
- 1/4 tsp cayenne pepper (optional)
- 1 (13.5 oz) can full-fat coconut milk
- 1 cup ripe mango puree
- 1/2 cup chicken broth
- 1 tbsp tomato paste
- Salt and black pepper to taste
- Fresh cilantro, chopped, for garnish
- Cooked rice, for serving
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and grated ginger. Cook for 1 minute more until fragrant.
- Stir in curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Add the chicken pieces to the skillet and cook until lightly browned on all sides.
- Pour in the coconut milk, mango puree, and chicken broth. Stir in the tomato paste.
- Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Season with salt and black pepper to taste.
- Serve the irresistible mango chicken curry hot over cooked rice, garnished with fresh cilantro.
Notes
- For a spicier mango chicken curry, add more cayenne pepper or a pinch of red pepper flakes.
