  • 1/4 tsp cumin

  • 1 cup ripe mango puree
  • 1/2 cup chicken broth
  • 1 tbsp tomato paste
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and grated ginger. Cook for 1 minute more until fragrant.
  3. Stir in curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  4. Add the chicken pieces to the skillet and cook until lightly browned on all sides.
  5. Pour in the coconut milk, mango puree, and chicken broth. Stir in the tomato paste.
  6. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
