Description

Crockpot Salsa Chicken is a simple yet flavorful dish that transforms ordinary chicken into a mouthwatering meal with just four ingredients.


Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa (your choice of mild, medium, or hot)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn

Instructions

  1. Rinse black beans under cold water and drain well.
  2. In the crockpot, place the chicken breasts at the bottom.
  3. Pour salsa generously over the chicken.
  4. Add the rinsed black beans and frozen corn; mix gently.
  5. Cover and cook on low for 6 hours or high for 3 hours until chicken reaches 165°F (75°C).
  6. Shred the cooked chicken with two forks and mix it back into the sauce.
  7. Serve warm in tacos or bowls, garnished with desired toppings.
