- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1 cup salsa (your choice of mild, medium, or hot)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen corn
Instructions
- Rinse black beans under cold water and drain well.
- In the crockpot, place the chicken breasts at the bottom.
- Pour salsa generously over the chicken.
- Add the rinsed black beans and frozen corn; mix gently.
- Cover and cook on low for 6 hours or high for 3 hours until chicken reaches 165°F (75°C).
- Shred the cooked chicken with two forks and mix it back into the sauce.
- Serve warm in tacos or bowls, garnished with desired toppings.
