Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 8 ounces dried chow mein noodles
  • 2 tablespoons vegetable oil, divided
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1/2 cup snow peas
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • For the Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup chicken broth

Instructions

  1. Cook chow mein noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, cornstarch, and chicken broth. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, red bell pepper, carrot, and snow peas. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  6. Return the cooked chicken to the skillet. Add the cooked noodles and the prepared sauce.
  7. Toss everything together until well combined and heated through, about 2-3 minutes.
  8. Serve your irresistible chicken chow mein immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
  • Feel free to add other vegetables like mushrooms, onions, or bok choy.
