- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 cup milk
- 2 eggs
- 2 cups all-purpose flour (for dumplings)
- 1 tablespoon baking powder
- 1/2 teaspoon salt (for dumplings)
Instructions
- In a large pot, brown the beef cubes over medium heat.
- Add onion and garlic, and sauté until softened.
- Stir in tomato paste, beef broth, carrots, potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- In a bowl, mix flour, baking powder, and salt for the dumplings.
- Add milk and eggs to the dumpling mixture, stirring until combined.
- Drop spoonfuls of the dumpling batter into the simmering stew.
- Cover and cook for an additional 15-20 minutes, until dumplings are fluffy.
