Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (for dumplings)

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add onion and garlic, and sauté until softened.
  3. Stir in tomato paste, beef broth, carrots, potatoes, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  5. In a bowl, mix flour, baking powder, and salt for the dumplings.
  6. Add milk and eggs to the dumpling mixture, stirring until combined.
  7. Drop spoonfuls of the dumpling batter into the simmering stew.
  8. Cover and cook for an additional 15-20 minutes, until dumplings are fluffy.
