Description

Hertzoggies are delightful jam and coconut tartlets, a classic South African treat.


Ingredients

Scale
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 125 g cold butter
  • 2 egg yolks
  • 2 tablespoons cold water
  • 1/2 cup smooth apricot jam
  • 2 egg whites
  • 1/2 cup sugar
  • 1 cup desiccated coconut

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a muffin tin.
  2. In a mixing bowl, combine the flour, sugar, and baking powder. Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles fine crumbs.
  3. Add the egg yolks and cold water, mixing gently until a soft dough forms. Do not overwork the dough.
  4. Wrap the dough and refrigerate for 30 minutes to make it easier to roll.
  5. Roll the chilled dough out on a lightly floured surface and cut circles large enough to fit into the muffin tin holes. Press each circle gently into the tin to form pastry shells.
  6. Spoon a small amount of apricot jam into each pastry base.
  7. In a clean bowl, beat the egg whites until stiff peaks form. Gradually fold in the sugar and desiccated coconut.
  8. Spoon the coconut mixture over the jam in each tartlet.
  9. Bake for 20–25 minutes, or until the tops are golden brown.
  10. Remove from the oven and allow to cool in the tin before carefully lifting out.
