Hertzoggies are delightful jam and coconut tartlets, a classic South African treat.

- 2 cups cake flour
- 1 teaspoon baking powder
- 1/2 cup sugar
- 125 g cold butter
- 2 egg yolks
- 2 tablespoons cold water
- 1/2 cup smooth apricot jam
- 2 egg whites
- 1/2 cup sugar
- 1 cup desiccated coconut
Instructions
- Preheat your oven to 180°C (350°F) and grease a muffin tin.
- In a mixing bowl, combine the flour, sugar, and baking powder. Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles fine crumbs.
- Add the egg yolks and cold water, mixing gently until a soft dough forms. Do not overwork the dough.
- Wrap the dough and refrigerate for 30 minutes to make it easier to roll.
- Roll the chilled dough out on a lightly floured surface and cut circles large enough to fit into the muffin tin holes. Press each circle gently into the tin to form pastry shells.
- Spoon a small amount of apricot jam into each pastry base.
- In a clean bowl, beat the egg whites until stiff peaks form. Gradually fold in the sugar and desiccated coconut.
- Spoon the coconut mixture over the jam in each tartlet.
- Bake for 20–25 minutes, or until the tops are golden brown.
- Remove from the oven and allow to cool in the tin before carefully lifting out.
Notes
- Ensure the butter is cold for the perfect pastry texture.
- Use smooth apricot jam for a better flavor.
- Chilling the dough helps with handling.
