Description

Delicious gyro bowls featuring homemade meatballs served with tzatziki, lemon rice, and a fresh cucumber salad.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup bread crumbs
  • 1/4 cup chopped fresh parsley
  • 1/2 cup plain yogurt
  • 1/4 cup cucumber, grated
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 cup rice
  • 2 cups chicken broth
  • 1 medium cucumber, sliced
  • 1 medium tomato, diced
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground beef, garlic powder, onion powder, oregano, salt, pepper, bread crumbs, and parsley.
  3. Form into meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. In another bowl, combine yogurt, grated cucumber, lemon juice, and dill to make tzatziki.
  6. In a saucepan, bring chicken broth to a boil, add rice, reduce heat, cover, and simmer for about 18 minutes.
  7. For the salad, combine sliced cucumber, diced tomato, and red onion in a bowl.
  8. Serve meatballs over lemon rice with tzatziki and cucumber salad on the side.
