Delicious gyro bowls featuring homemade meatballs served with tzatziki, lemon rice, and a fresh cucumber salad.
Ingredients

- 1 pound ground beef
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup bread crumbs
- 1/4 cup chopped fresh parsley
- 1/2 cup plain yogurt
- 1/4 cup cucumber, grated
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 1 cup rice
- 2 cups chicken broth
- 1 medium cucumber, sliced
- 1 medium tomato, diced
- 1/4 cup red onion, thinly sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground beef, garlic powder, onion powder, oregano, salt, pepper, bread crumbs, and parsley.
- Form into meatballs and place on a baking sheet.
- Bake for 20-25 minutes or until cooked through.
- In another bowl, combine yogurt, grated cucumber, lemon juice, and dill to make tzatziki.
- In a saucepan, bring chicken broth to a boil, add rice, reduce heat, cover, and simmer for about 18 minutes.
- For the salad, combine sliced cucumber, diced tomato, and red onion in a bowl.
- Serve meatballs over lemon rice with tzatziki and cucumber salad on the side.
