Guy’s Mac Salad is a creamy and tangy Hawaiian-inspired pasta salad perfect for summer BBQs. It features elbow macaroni, fresh vegetables, and a homemade dressing that is easy to customize.

- 8 oz elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp sugar
- 1/2 tsp garlic powder
- 1 cup shredded carrots
- 1/2 cup diced green bell pepper
- 1/2 cup diced celery
- 1/2 cup chopped green onions
- 1/2 cup diced sweet pickles/relish (optional)
Instructions
- Boil elbow macaroni in salted water until al dente. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sugar, and garlic powder.
- Gently fold in the cooled macaroni, shredded carrots, diced bell pepper, diced celery, and chopped green onions.
- Mix until all ingredients are coated in the dressing.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Stir before serving. Garnish if desired.

- Chill for at least 30 minutes for best flavor.
- Adjust dressing ingredients to your taste.
- Can be made gluten-free by using gluten-free pasta.
