Description

A delicious and healthy twist on jacket potatoes topped with creamy cottage cheese and Greek flavors.


Ingredients

  • 2 large jacket potatoes
  • 200g cottage cheese
  • 100g diced cucumber
  • 50g cherry tomatoes, halved
  • 2 tbsp fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes and prick them with a fork. Bake for 45-60 minutes until tender.
  3. Once the potatoes are cooked, let them cool slightly before cutting them open.
  4. In a bowl, combine the cottage cheese, diced cucumber, cherry tomatoes, dill, olive oil, salt, and pepper.
  5. Spoon the cottage cheese mixture generously into each potato.
  6. Serve warm and enjoy!
