A delicious and healthy twist on jacket potatoes topped with creamy cottage cheese and Greek flavors.
Ingredients

- 2 large jacket potatoes
- 200g cottage cheese
- 100g diced cucumber
- 50g cherry tomatoes, halved
- 2 tbsp fresh dill, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Wash the potatoes and prick them with a fork. Bake for 45-60 minutes until tender.
- Once the potatoes are cooked, let them cool slightly before cutting them open.
- In a bowl, combine the cottage cheese, diced cucumber, cherry tomatoes, dill, olive oil, salt, and pepper.
- Spoon the cottage cheese mixture generously into each potato.
- Serve warm and enjoy!
