Description

Gingerbread Truffles are a quick and easy no-bake Christmas treat with gingerbread spices and a creamy chocolate coating.


Ingredients

Scale
  • 1 package of gingerbread cake mix
  • 1/2 cup of cream cheese, softened
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground nutmeg
  • 1 1/2 cups of powdered sugar
  • 8 oz of white chocolate
  • 1 tablespoon of molasses
  • 1/2 cup of finely chopped crystallized ginger (optional)

Instructions

  1. In a large bowl, combine gingerbread cake mix, cream cheese, cinnamon, ginger, nutmeg, powdered sugar, and molasses. Stir until fully combined, adding more powdered sugar if necessary to make the mixture thick but pliable.
  2. Shape the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  3. Refrigerate for at least 30 minutes to firm up the truffles.
  4. Melt the white chocolate in the microwave or using a double boiler, stirring until smooth. Add a pinch of cinnamon or nutmeg for extra flavor.
  5. Dip each truffle into the melted white chocolate, using a fork to remove excess chocolate. Place the coated truffles back on the parchment paper.
  6. Sprinkle with chopped crystallized ginger or any other decorations before the chocolate hardens.
  7. Allow the chocolate coating to set for 30 minutes at room temperature or refrigerate to speed up the process.
