Instructions
- Prepare the crust: Roll out chilled pie dough and fit into a 9-inch pie dish. Crimp edges, chill, then blind bake at 375°F with parchment paper and pie weights until golden. Cool completely.
- Prepare the filling: Whip 1 cup heavy cream to stiff peaks and refrigerate. Melt the chopped chocolate and let it cool slightly.
- In a heatproof bowl, whisk eggs and sugar together over simmering water until the mixture reaches 160°F. Remove from heat and cool.
- Stir the cooled melted chocolate into the egg mixture until smooth.
- In a separate bowl, beat the softened butter until creamy. Mix in 1 1/2 teaspoons vanilla extract, then add the chocolate-egg mixture and beat until smooth.

- Spread the filling into the cooled pie crust. Cover and refrigerate for at least 4–6 hours, or preferably overnight, until set.
- Prepare the topping: Whip 1 cup cream with 2 tablespoons sugar and 1/2 teaspoon vanilla until medium peaks form.
- Spread or pipe the whipped cream topping over the chilled French silk pie. Garnish with chocolate curls if desired.
