Instructions

  1. Prepare the crust: Roll out chilled pie dough and fit into a 9-inch pie dish. Crimp edges, chill, then blind bake at 375°F with parchment paper and pie weights until golden. Cool completely.
  2. Prepare the filling: Whip 1 cup heavy cream to stiff peaks and refrigerate. Melt the chopped chocolate and let it cool slightly.
  3. In a heatproof bowl, whisk eggs and sugar together over simmering water until the mixture reaches 160°F. Remove from heat and cool.
  4. Stir the cooled melted chocolate into the egg mixture until smooth.
  5. In a separate bowl, beat the softened butter until creamy. Mix in 1 1/2 teaspoons vanilla extract, then add the chocolate-egg mixture and beat until smooth.
