A flavorful roasted vegetable chickpea dish with a zesty dressing. This recipe is easy to make, healthy, and perfect for weeknights or impressing guests.

- 2 cans (15 oz each) chickpeas, rinsed and drained
- 1 lb mixed vegetables (e.g., broccoli florets, bell pepper chunks, red onion wedges, zucchini slices)
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- For the Zesty Dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the rinsed and drained chickpeas with 3 tablespoons of olive oil, cumin, paprika, garlic powder, onion powder, salt, and pepper. Ensure the chickpeas are well coated.
- Spread the seasoned chickpeas in a single layer on one half of a baking sheet.
- In the same bowl (no need to wash), toss the mixed vegetables with 1 tablespoon of olive oil, salt, and pepper.
- Spread the seasoned vegetables in a single layer on the other half of the baking sheet.
- Roast for 25-30 minutes, or until the vegetables are tender and slightly caramelized, and the chickpeas are slightly crispy.
- While the vegetables and chickpeas are roasting, prepare the zesty dressing. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Once the roasted vegetables and chickpeas are done, transfer them to a serving bowl.
- Drizzle the zesty dressing over the roasted vegetable chickpea mixture.
- Toss gently to combine and serve immediately.
Notes
- Feel free to use any seasonal vegetables you have on hand.
- For extra flavor, add a pinch of cayenne pepper to the chickpea seasoning.
- The dressing can be made ahead of time and stored in the refrigerator.
