- 3 ripe but firm pears (Bosc or Anjou), halved and cored
- 4 oz blue cheese, crumbled
- 1/4 cup chopped toasted walnuts or pecans
- 1 tbsp honey, plus more for drizzling
- 1 tbsp fresh thyme leaves (optional)
- Freshly ground black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Wash and dry pears, slice in half lengthwise, and remove cores. Trim bottoms if needed so they sit flat.
- In a bowl, combine blue cheese, toasted nuts, honey, thyme, and black pepper.
- Gently mash and mix until combined but still textured.
- Divide the filling evenly among pear halves, pressing gently into the centers.
- Arrange pears on the prepared baking sheet.
- Bake for 15–20 minutes until pears are tender and filling is bubbly and lightly golden.
- Cool briefly, drizzle with additional honey, and serve warm.
