- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped carrots
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 package (16 oz) refrigerated biscuit dough, cut into pieces
Instructions
- Place chicken breasts or thighs in the slow cooker.
- Add chicken broth, heavy cream, butter, onion, celery, carrots, garlic, thyme, salt, and pepper.
- Stir in the condensed cream of chicken soup.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
- Add the biscuit dough pieces to the slow cooker.
- Cover and cook on high for another 20-30 minutes, or until dumplings are cooked through.
Notes
- For a creamier broth, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or corn.
