- 1 lb flounder fillets
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Pat the flounder fillets dry with paper towels.
- In a shallow dish, combine flour, salt, and pepper. Dredge each flounder fillet in the flour mixture, ensuring it’s evenly coated.
- Heat olive oil in a large skillet over medium-high heat.
- Carefully place the floured flounder fillets in the hot skillet. Sear for 3-4 minutes per side, until golden brown and crispy. Remove the flounder from the skillet and set aside.
- Reduce the heat to medium. Add butter to the same skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant.
- Stir in the fresh lemon juice. Cook for another minute, scraping up any browned bits from the bottom of the skillet.
- Return the crispy flounder fillets to the skillet and spoon the lemon butter sauce over them.
- Sprinkle with fresh chopped parsley before serving.
Notes
- For extra crispy skin, ensure the flounder is very dry before dredging.
- Adjust lemon juice and butter to your taste preference.
- Serve immediately for the best crispy texture.
