Ingredients

  • 1 lb flounder fillets
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pat the flounder fillets dry with paper towels.
  2. In a shallow dish, combine flour, salt, and pepper. Dredge each flounder fillet in the flour mixture, ensuring it’s evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Carefully place the floured flounder fillets in the hot skillet. Sear for 3-4 minutes per side, until golden brown and crispy. Remove the flounder from the skillet and set aside.
  5. Reduce the heat to medium. Add butter to the same skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant.
  6. Stir in the fresh lemon juice. Cook for another minute, scraping up any browned bits from the bottom of the skillet.
  7. Return the crispy flounder fillets to the skillet and spoon the lemon butter sauce over them.
  8. Sprinkle with fresh chopped parsley before serving.

Notes

  • For extra crispy skin, ensure the flounder is very dry before dredging.
  • Adjust lemon juice and butter to your taste preference.
