Description
A rustic, vibrant fall pie featuring soft crab apples, tart cranberries, and a warm honey finish.

- 1 1/4 cups all-purpose flour
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter, cold
- 3–6 tablespoons ice cold water
- 8 small crab apples, quartered and cored (unpeeled)
- 6 oz (1/2 bag) fresh or frozen cranberries
- 2/3 cup sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons orange juice
- 1/4 cup liquidy neutral honey
Instructions
- Combine flour, sugar, and salt in a bowl. Cut in the cold butter until the mixture resembles coarse sand with some larger pieces remaining.
- Add 4–5 tablespoons of ice water and mix with a fork until the dough begins to come together, adding more water only as needed.
- Turn the dough onto a lightly floured surface, shape into a disc, wrap in plastic, and refrigerate for at least 1 hour (up to 24 hours).
- Preheat oven to 400°F (204°C). Spray an 8-inch cast iron pan or 8–9-inch pie plate with baking spray.
- Roll chilled dough into a 12-inch round and transfer to the pan. Fold edges under to create a high rim and crimp.
- Sprinkle one-third of the sugar into the bottom of the crust and add the orange juice.
- Arrange the crab apple pieces cut-side down to fill the dish. Scatter cranberries over the gaps. Sprinkle with the remaining sugar and cinnamon.
- Bake at 400°F for 10 minutes, then reduce heat to 375°F (190°C) and bake for 1 hour, covering crust edges if browning too quickly.
- Remove from oven and immediately brush the crust with honey. Drizzle remaining honey over the hot fruit.
- Cool the pie for at least 1 hour before slicing to allow the filling to set.
