- 2 large baking potatoes
- 1 cup cottage cheese
- 1 teaspoon taco seasoning
- 1/2 cup chopped tomatoes
- 1/4 cup sliced green onions
- 1/4 cup shredded cheese (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork several times.
- Bake the potatoes in the preheated oven for 45-60 minutes until tender.
- In a bowl, mix cottage cheese and taco seasoning until well combined.
- Once the potatoes are cooked, remove them from the oven and let cool slightly.
