Description

Delicious and nutritious cottage cheese egg bites perfect for breakfast or snacks.


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the cottage cheese and eggs until well combined.
  3. Add shredded cheese, bell peppers, green onions, salt, and pepper. Mix well.
  4. Grease a muffin tin with cooking spray.
  5. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 25-30 minutes or until the egg bites are set and lightly golden.
  7. Allow to cool for a few minutes before removing from the tin.
  8. Serve warm or refrigerate for later.
