Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 large bread bowls

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Stir in onions and garlic, cooking until softened.
  4. Add the beef broth, carrots, potatoes, celery, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, reduce heat, and simmer for 1.5 to 2 hours until beef is tender.
  6. While stew is cooking, prepare bread bowls by cutting off the tops and hollowing them out.
  7. Once stew is ready, ladle it into the bread bowls and serve warm.
