Ingredients

- 1 pound chicken breast, grilled and sliced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup corn, fresh or canned
- 1/2 cup black beans, drained and rinsed
- 1 avocado, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon chipotle in adobo sauce, minced
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together lime juice, olive oil, chipotle in adobo, honey, salt, and pepper to create the dressing.
- In a large salad bowl, combine mixed greens, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
- Add the grilled chicken on top of the salad.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!
