Ingredients

  • 1 pound chicken breast, grilled and sliced
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, fresh or canned
  • 1/2 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle in adobo sauce, minced
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together lime juice, olive oil, chipotle in adobo, honey, salt, and pepper to create the dressing.
  2. In a large salad bowl, combine mixed greens, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  3. Add the grilled chicken on top of the salad.
  4. Drizzle the dressing over the salad and toss gently to combine.
