Description

Ingredients

  • 520 grams Chicken breast fillets
  • 2 tablespoons Cornflour
  • 1 large Egg
  • 3 tablespoons Plain flour
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic salt
  • 1 teaspoon Paprika
  • 2 tablespoons Oil
  • 4 medium Plums
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow bell pepper
  • 2 cloves Garlic
  • 3 tablespoons Tomato puree
  • 2 tablespoons Chinese rice vinegar
  • 3 tablespoons Light brown sugar
  • 3 tablespoons Sweet chilli sauce
  • 2 tablespoons Dark soy sauce
  • 1 teaspoon Chili flakes
  • 1 cup Pineapple juice

Instructions

  1. Combine ingredients for the coating in a bowl. Mix the cornflour, egg, plain flour, salt, pepper, garlic salt, and paprika until well blended.
  2. Coat the chicken pieces in the flour mixture, ensuring each chunk is evenly covered.
  3. Heat oil in a pan over medium-high heat. Once shimmering, add the coated chicken and cook until golden brown, around 6-8 minutes.
  4. Add the sliced plums and bell peppers to the pan. Stir-fry for about 3-4 minutes until the peppers soften.
  5. Incorporate minced garlic and cook for another minute, stirring continuously.
  6. Mix the sticky sauce in a separate bowl until smooth.
  7. Pour the sticky sauce over the chicken and vegetables in the pan. Cook on medium heat until heated through, about 2-3 minutes.
