- 520 grams Chicken breast fillets
- 2 tablespoons Cornflour
- 1 large Egg
- 3 tablespoons Plain flour
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic salt
- 1 teaspoon Paprika
- 2 tablespoons Oil
- 4 medium Plums
- 1 medium Red bell pepper
- 1 medium Green bell pepper
- 1 medium Yellow bell pepper
- 2 cloves Garlic
- 3 tablespoons Tomato puree
- 2 tablespoons Chinese rice vinegar
- 3 tablespoons Light brown sugar
- 3 tablespoons Sweet chilli sauce
- 2 tablespoons Dark soy sauce
- 1 teaspoon Chili flakes
- 1 cup Pineapple juice
Instructions
- Combine ingredients for the coating in a bowl. Mix the cornflour, egg, plain flour, salt, pepper, garlic salt, and paprika until well blended.
- Coat the chicken pieces in the flour mixture, ensuring each chunk is evenly covered.
- Heat oil in a pan over medium-high heat. Once shimmering, add the coated chicken and cook until golden brown, around 6-8 minutes.
- Add the sliced plums and bell peppers to the pan. Stir-fry for about 3-4 minutes until the peppers soften.
- Incorporate minced garlic and cook for another minute, stirring continuously.
- Mix the sticky sauce in a separate bowl until smooth.
- Pour the sticky sauce over the chicken and vegetables in the pan. Cook on medium heat until heated through, about 2-3 minutes.
