- 1 cup Broccoli (Fresh or frozen, chopped)

- 1 cup Cheddar Cheese (Sharp cheddar recommended)
- 1 tbsp Cajun Seasoning (Adjust for milder taste)
- ½ tsp Salt (For seasoning)
- 2 tbsp Olive Oil (Melted butter can be a substitute)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice a pocket into each chicken breast lengthwise, being careful not to cut all the way through.
- Season the chicken generously with Cajun seasoning and salt on both sides.
- Mix chopped broccoli, cream cheese, cheddar cheese, and ⅛ teaspoon of salt in a bowl until combined.
- Stuff each chicken breast with the broccoli cheese mixture, packing it well.
- Brush the tops of the stuffed chicken with olive oil.
- Bake the chicken for about 30 minutes or until the internal temperature reaches 165°F (75°C).
- Rest the chicken for 5 minutes before serving.
