- 1 small Onion (finely diced)
- 2 cloves Garlic (minced)
- 1 tbsp Taco Seasoning (or to taste)
- 1 cup Salsa (or tomato sauce)
- 1 cup Refried Beans (optional)
- 2 cups Shredded Cheese (Cheddar, Monterey Jack, or Mexican blend) (to taste)
- 4 large Flour Tortillas (10-inch size)
- 1 cup Vegetable Oil (for frying or baking)
Instructions
- In a skillet over medium heat, cook the ground beef and diced onion until browned and tender, about 5-7 minutes. Drain any excess grease, then stir in the garlic, taco seasoning, and salsa. Let it simmer for 2-3 minutes until thickened.
- Spread a layer of refried beans down the center of each tortilla, then add the beef mixture and sprinkle shredded cheese on top. Fold the sides in, and roll tightly to enclose the filling.
- For Fried: Heat vegetable oil in a skillet to 350°F (175°C). Fry the chimichangas seam-side down until golden brown, about 2-3 minutes per side. Drain on paper towels afterward.
- For Baked: Preheat your oven to 400°F (200°C). Arrange chimichangas seam-side down on a greased baking sheet, brush with oil, and bake for 20-25 minutes until golden and crispy.
- Allow the chimichangas to rest briefly before serving.
- Enjoy them with toppings like sour cream, guacamole, or fresh salsa.
- Top with chopped cilantro for a fresh flavor boost.
