- 1 pound Baby Calamari (Can substitute with shrimp or grilled chicken.)
- 4 cups Mixed Greens (Feel free to mix in arugula, spinach, or romaine.)
- 1 cup Cherry Tomatoes (Can substitute with any diced tomatoes or bell peppers.)
- 1 large Cucumber (Zucchini can be used as an alternative.)
- 1/2 medium Red Onion (Can omit for a milder flavor.)
- 3 tablespoons Lemon Juice (Freshly squeezed is best.)
- 1/4 cup Olive Oil (Extra virgin olive oil is recommended.)

Instructions
- Start by cleaning and rinsing the baby calamari under cold water. Optionally, slice it into rings.
- Heat olive oil in a pan over medium-high heat. Add the calamari and sauté for about 2 minutes until it turns opaque.
- In a large bowl, toss together the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
- Add the sautéed calamari to the vegetable mix. Drizzle with lemon juice and olive oil, then gently toss everything together.
- Season your salad with salt and pepper to taste. Serve immediately for the best freshness.
