This Vanilla Fruit Cobbler is a warm, comforting dessert featuring juicy plums baked beneath a golden vanilla topping and sprinkled with cinnamon sugar.

- 2 x 825 g cans whole plums, well drained
- 1 packet vanilla cupcake mix
- 310 ml milk
- Cinnamon sugar, to taste
- Vanilla custard, to serve
Instructions
- Preheat the oven to 180°C (160°C fan-forced).
- Remove the pits from the plums and place them evenly in a 6-cup capacity ovenproof dish.
- Prepare the cupcake mix according to packet instructions by adding the milk and stirring until smooth.
- Pour the vanilla batter evenly over the plums, covering them mostly.
- Sprinkle generously with cinnamon sugar for extra sweetness and flavor.
- Bake for about 1 hour, or until the topping is golden and a skewer inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
- Let the cobbler rest for 5 minutes before serving warm with vanilla custard.
