- 200 g Crushed Lotus Biscuits (Biscoff cookies are the best choice.)
- 100 g Butter (Can substitute with coconut oil for a vegan option.)
- 250 ml Whipped Cream (Consider Greek yogurt for a tangy twist.)
- 200 g Cream Cheese (Greek yogurt can be a lighter substitute.)
- 300 g Fresh Strawberries (Can substitute with raspberries or peaches.)
- 1 tblsp Lemon Juice (Enhances the flavor of strawberries.)
Instructions
- Prepare the Base: Crush the lotus biscuits in a food processor until fine crumbs form. Combine with melted butter and mix until the crumbs stick together. Press into the bottom of your dish to create an even base.
- Make the Cream Layer: In a mixing bowl, combine the whipped cream with cream cheese. Whisk until smooth and fluffy. Optionally fold in Greek yogurt.
- Assemble Layers: Spread an even layer of the cream mixture over the biscuit base. Layer on thinly sliced strawberries tossed in lemon juice.
- Repeat Layers: If desired, repeat the cream and strawberry layers. Finish with crushed cookies on top.
- Chill: Refrigerate for 30–60 minutes to allow flavors to meld and the dessert to set.
